  • 3 Medium eggplants (2.5lbs/1kg)
  • Olive oil
  • 1 ½ lbs / 700 g Ground lamb
  • 1 Onion - finely chopped
  • 3 Cloves garlic - minced
  • 3 cups / 750 ml Tomatoes - diced (fresh or canned)
  • 3 tbsp / 30 ml Tomato paste
  • 1/3 cup / 75 ml Dry red or white wine
  • 1 tsp Salt
  • 1 tsp Dried oregano leaves
  • ½ tsp Black pepper
  • ¼ tsp Cinnamon
  • 3 cups / 750 ml Béchamel Sauce (see below)
  • 1 tbsp / 15 ml Lemon Juice
  • 1 cup / 250 ml Crumbled feta cheese
