Leek and Potato Soup
Serves: 4 - 6

SENSATIONAL SOY
Smooth Original
  • 1 cup / 250 ml SENSATIONAL SOY Smooth Original
  • 4 tbsp / 60 ml Lactantia Healthy Attitude Omega-3 Margarine
  • 1 bunch Leeks, about three large leeks - cleaned and white part thinly sliced
  • 2 cups / 500 ml Potatoes - peeled and cubed
  • 2 ½ cups / 625 ml Vegetable broth
  • ¼ tsp Black or white pepper
  1. In a large heavy bottomed saucepan over medium heat melt margarine. Add prepared leeks and cook until soft. Add potatoes and continue cooking for about 5 minutes, stir occasionally.
  2. Add vegetable broth and pepper. Broth should just cover potato mixture. Add more broth if necessary. Cover and simmer for about 25 minutes until potatoes are well done.
  3. Add SENSATIONAL SOY beverage.
  4. Using a hand-held blender, or in batches in a food processor or blender process soup until smooth. Adjust seasonings and serve immediately. Garnish with snipped fresh chives if desired.
